Weller Full Proof Bourbon is a wheated bourbon distilled at the Buffalo Trace Distillery. Bottled at 114 proof, this is the same proof as when the spirit entered the barrel for maturation. The Kentucky straight bourbon is bottled without chill filtration. Baked apples and vanilla are showcased on the nose, along with fiery cinnamon. The palate offers vanilla bean, baking spices, sour cherries, and cassia bark. The finish turns to the drier and more medicinal side, with spearmint, tannic oak, leather, and milk chocolate truffles. Quite sippable despite the high proof, with a pleasantly lengthy finish.

After much anticipation, Buffalo Trace finally gave the coveted wheated mash bill bourbon series a barrel strength, non-chill filtered bottling, retaining all of the oily flavorful goodness allegedly lost in the chill-filtration process. Weller in general is said to share a similar mash bill to Pappy Van Winkle, and is sure to garner its share of collection fever in some whiskey corners. Barrelled and bottled at 57%, the decision to go full proof is said to be a response to requests and demand from bar owners and liquor stores. Weller Full Proof is a single annual release, trickling into select stores and states meaning it’s almost impossible to get.
You’re greeted with a wealth of delectable bakery scents upon pour. Pound cake, crumbled cinnamon and sugar, rich caramel, vanilla extract, and buttercream frosting combine to form a sugar fan’s dream aroma. Classically Weller through and through, with more sweetness being highlighted than other Weller offerings. It’s a bit on the gentle side given its proof, forcing a swirl of the glass to liven it up. This lack of overall intensity is the only thing that holds it back.
